Deconstructed Pumpkin Pie aka Pumpkin Dip


This recipe has been popping up all over Facebook and loving all things pumpkin I couldn't wait to try it.  Taking into account said pumpkin love, I slightly adjusted the recipe, increasing the amount of pumpkin and spices.  It comes together quickly and would look utterly adorable served in a hollowed out mini pumpkin.  The perfect Fall dish for parties, tailgating, and celebrations!
Pumpkin Dip
Ingredients:
  • 1 large can pumpkin (original recipe called for 15 oz)
  • 16 oz Cool Whip
  • 2 t. pumpkin pie spice
  • 1 1/2 t cinnamon
  • large box vanilla pudding mix
Directions:
The Facebook edition didn't include directions, but I would suggest mixing pumpkin, spices, and pudding mix together first.  Then fold in Cool Whip gently until combined.
