What's for Dinner [Pepperoncini Beef with Vegetables]

A few weeks ago Hubby and I had yet another delicious dinner with dear friends D and S.  (They are fabulous cooks....we're always guaranteed terrific company and a good meal to boot when we're together.)  I immediately knew this dinner would be one that I would try to repeat at home.  It's made in the crock pot (I'm always in search of Hubby approved crock pot recipes), full of flavor, and different than our typical recipes.  Don't be concerned with it being too spicy....it's not.



Pepperoncini Beef Sliders with Vegetables
Ingredients:
  • 1 chuck roast
  • 1 jar pepperoncini, with juice
  • 1 jar hot mixed vegetables, with juice (These are found right next to the pepperoncini.  The mix we used included cauliflower and carrots.)
  • 1 envelope Italian Dressing Mix
  • 1 can beef broth
Directions:
Mix all ingredients together in crock pot.  Cook on low for 8-10 hours.  When tender, remove beef and shred.  Can serve juice as a dipping sauce as is, or can dilute with a bit of beef broth to taste.  We served these sandwiches on toasted slider buns with Provolone cheese.
